Kash’s Perfect Gluten Free Pancakes

Ingredients

Serves 2

  • 1 3/4 Cup Gluten Free Flour Blend (KingArthur Measure for Measure or Gluten Free Cafe All Purpose)
  • 1 tsp baking powder
  • 1/2 tsp corn starch
  • 1/2 tsp salt
  • 5 tsp granulated sugar
  • 2 Tbsp vegetable oil
  • 1 tsp vanilla extract
  • 2 eggs, beaten
  • 1 1/2 Cup Buttermilk
  • 1/4 cup water

Mix dry ingredients. In a separate bowl beat eggs with vanilla. Mix eggs, oil, and buttermilk into dry ingredients. Allow batter to sit 5 minutes then whisk in remaining water. On medium low heat lightly spray nonstick pan. (If pancakes have uneven color as pictured above gently wipe pan with paper towel to reduce oil) **appearance doesn’t affect flavor or texture
