How did we arrive at the point of creating the world’s best gluten-free waffles? When Mike became intolerant of gluten our circumstances in life changed. What didn’t change were his taste buds, his favorite foods were mostly wheat-based. Fried Chicken Tenders, Doughnuts, Peach Cobbler, Pizza, Burgers, Cinnamon Rolls (from Mrs. Winner’s…can I get a what, what!!! If you have any idea about that one) and of course being a southerner BISCUITS!!! I would be completely remiss if I was to fail to include the most important food in his food pyramid… Captain D’s. If you don’t believe me…I actually have the pictures to prove it. Yes, people, it’s that bad.

For any of y’all who have been forced into this lifestyle. You probably understand where he is coming from. My simple solution was to just eat vegetables and meat and cut out the bread. If looks could kill, I’d be dead a hundred times over.

So, to save myself and to help him out in life, I’ve learned to recreate a few of his favorites. I probably still serve him way more vegetables than he would like…but hey, I’m his wife, that’s what we do!

So here is a favorite version of Gluten-Free waffles that DO NOT taste gluten-free!They are the soft and moist variety. Winner winner chicken dinner! Speaking of chicken, I’ve recreated a few versions of Nashville Hot Chicken and it’s Gluten Free…of course!

Vegetarian, Gluten free

Ingredients

  • 1 3/4 cups Gluten-Free All-Purpose Flour
  • 6 tsp Granulated sugar
  • ¼  tsp Salt
  • 1 tsp Baking powder
  • ½ tsp Corn Starch
  • ½ tsp Cinnamon
  • 2 Eggs Beaten
  • 1 tsp Vanilla extract
  • 1/4 cup Vegetable oil (Grapeseed, Coconut)
  • 1 1/2 cups Buttermilk

Note* add more water or milk if your flour blend is too thick. I added ¼ cup additional buttermilk to my batter. I was using Gluten Free Cafe’s All purpose Blend. I was still a thick batter. That’s okay!

Instructions

Place dry ingredients in a bowl. Mix them for even distribution. In a different bowl beat eggs and vanilla. Pour into dry ingredients and add the rest of the ingredients. Mix and let sit for a few minutes. This allows the sugars to dissolve and enhances the cinnamon flavor.

Spray waffle maker and follow manufacturer’s instructions. Top with Butter and Syrup or Fruit. Apple Butter is delicious on this as well!
