As a child, I was fortunate to have a mom that always prepared an afternoon snack for my sisters and I. It was rare to eat something that wasn’t completely healthy. Ants on a log was a favorite of mine. I liked the salty peanut butter and sweet raisins on crunchy celery. If you looked at Mike- he would be making a strange face right now. He’ll argue with me up and down the road and back again about how TERRRRRIBLE celery is…despite the fact that I sneak it in his food…more often than not…Might I add??? With ZERO complaints. It’s all in the preparation baby.
We have a daughter who is intrigued with eating vegan and vegetarian often. Since it’s healthy we are A-Okay with it. We do emphasize eating a variety of foods to get the most nutrition. As an adult, I’m not a huge snacker, but a warm childhood memory inspired this play on one of my favorite childhood snacks. Thanks, Mom! Sniffle, sniffle.
Chunky Sunflower Butter and Celery
- 1/4 Cup Homemade Sunflower Butter
- 2 Tbsp Dried Cranberries
- 6 Raw Almonds Chopped
Slice the celery into 4-inch segments. Mix the above ingredients together and top with additional almonds and fruit for garnish…and remember to make it pretty because “You eat with your eyes 1st!”
